3. Place the eel pieces in the boiling water and cook for approximately 20 minutes, or until the eel is fully cooked and tender.
4. Once the eel is cooked, strain off the cooking liquid and set it aside.
5. Rub the tomatoes through a sieve to create a smooth sauce.
6. In a saucepan, combine half a pint of the eel cooking liquid with the tomato sauce.
7. In a separate pan, melt the butter over medium heat. Add the flour and cook for a minute or two, stirring constantly until a roux forms.
8. Slowly pour the tomato and eel cooking liquid mixture into the pan with the roux, stirring continuously to avoid lumps.
9. Season the sauce with salt and pepper to taste. Adjust the seasonings as desired.
10. Place the cooked eel pieces on a serving dish and pour the tomato sauce over them. Garnish with fresh parsley.
11. Serve the eel and tomato sauce dish hot alongside your favorite side dishes or with crusty bread.
