2. Once the dough is ready, divide it into small portions. Roll each portion into a ball and flatten it with your hands, creating round flat cakes.

3. Take cooked prunes and remove the kernels. Alternatively, prepare a cheese mixture by combining your choice of soft cheese, such as cream cheese or cottage cheese, with your favorite seasonings or herbs.

4. Place a spoonful of cooked prunes or cheese mixture onto the center of one flat matzoth cake. Ensure you leave enough space around the edges for sealing the kleis.

5. Take another flat matzoth cake and carefully place it over the one with the filling, pressing the edges firmly together. Roll the two cakes together until you achieve a perfect round shape, ensuring the filling is fully enclosed within the dough.

6. In a large pot, bring salt water to a boil. It is important that the water is boiling vigorously before adding the kleis.

7. Drop the filled matzoth kleis into the boiling water and cook them until they float to the surface. This usually takes around 20-25 minutes.

8. While the kleis are cooking, heat goose fat or butter in a separate pan, and cut up an onion. Add the onion to the fat or butter and sauté until the onion is browned.

9. Once the kleis are cooked, remove them from the boiling water using a slotted spoon and transfer them to a serving dish.

10. Pour the browned onion and fat or butter over the kleis, ensuring they are evenly coated.
