Recipe for Haricot Beans and Beef:

Ingredients:
- 2 cups haricot beans
- 1 coarsely chopped onion
- Fat (e.g., olive oil, bacon fat)
- 2 pints water
- 1 pound beef, cut into fairly large pieces
- 1 carrot, diced
- 1/2 turnip, diced
- Salt and pepper to taste
- Pea meal or flour, baked to a fawn color (for thickening)
- Vinegar, to taste
- Potatoes and green vegetables, for serving

Instructions:

1. Wash the haricot beans thoroughly and leave them covered with two pints of water overnight. This will help soften the beans and reduce cooking time.

2. Preheat the oven to 325°F (160°C).

3. In a large skillet or pot, heat a little fat over medium heat. Add the coarsely chopped onion and cook until lightly browned.

4. Transfer the browned onion to a casserole or stew-jar, along with the soaked haricot beans and their water.

5. Cover the casserole or stew-jar and cook in the preheated oven or by the side of the fire for one hour.

6. After one hour, add the beef pieces to the casserole or stew-jar.

7. Cover again and continue to cook for another hour.

8. Add the diced carrot and turnip to the stew. Season with salt and pepper to taste.

9. Continue to cook the stew at a slow pace until the vegetables are tender, approximately 30 minutes.

10. In a separate bowl, mix the baked pea meal or flour with a little water to form a paste.

11. Add the paste to the stew, stirring well to thicken the sauce.

12. Adjust the seasoning if needed and add vinegar to taste. The vinegar will add a tangy flavor to balance the richness of the dish.

13. Before serving, make sure the beef is cooked through and tender. If not, continue to cook until desired tenderness is achieved.

14. Serve the Haricot Beans and Beef stew sparingly, accompanied by an abundance of boiled or mashed potatoes and a side of green vegetables.
