DARK PART:
Ingredients:
- 1 cup brown sugar
- 1/2 cup butter
- 1/2 cup molasses
- 1/2 cup strong coffee

- 2 1/2 cups flour
- 1 cup raisins
- 1 teaspoon soda
- 1 teaspoon cinnamon
- 1 teaspoon cloves
- 1 1/2 teaspoons mace

WHITE PART:

- 2 cups sugar
- 1/2 cup butter
- 1 cup sweet milk
- 2 cups flour
- 1 cup corn starch
- White of 2 eggs
- 1 teaspoon baking powder

Instructions:
1. In a mixing bowl, cream together the sugar and butter until light and fluffy.
2. Add the sweet milk and mix well.
3. Gradually add the flour, corn starch, and baking powder to the wet ingredients, stirring until just combined.
4. In a separate bowl, beat the egg whites until stiff peaks form.
5. Gently fold the beaten egg whites into the batter until fully incorporated.
6. Pour the white batter into a greased and floured cake pan, spreading it evenly.
7. Bake in the preheated oven for approximately 30-35 minutes or until a toothpick inserted into the center comes out clean.
8. Once baked, remove from the oven and let it cool completely before assembling the cake.

ASSEMBLING THE CAKE:
1. Once both the dark and white parts have fully cooled, carefully remove them from their respective cake pans.
2. Trim off any uneven edges from both cakes to ensure even layers.
3. Place the dark layer on a serving plate, followed by a layer of the white batter on top.
4. Continue alternating layers until all the cake layers are used.
