Over time, variations of the recipe have emerged, but the traditional Prince Albert Pudding remains a delicious and indulgent dessert.

- The addition of raisins and citron adds a burst of sweetness and texture to the pudding.
- The use of blanched and pounded almonds provides a delightful nutty flavor and a delicate crunch.

Ingredients:
- 1/2 pound sweet butter
- 1/2 pound sifted powdered sugar
- 6 egg yolks
- Grated peel of 1 lemon
- 1/2 pound raisins, stoned
- Citron, cut very fine
- 1/2 pound finest flour, sifted multiple times
- 6 egg whites, stiffly beaten
- Blanched and pounded almonds
- Sweet brandy or fruit sauce, for serving

Instructions:
1. In a mixing bowl, rub half a pound of sweet butter and half a pound of sifted powdered sugar together until creamy and well combined.
2. Add the yolks of six eggs, one at a time, whisking well after each addition.
3. Mix in the grated peel of one lemon, ensuring it is evenly distributed in the batter.
4. Stone half a pound of raisins and add them to the mixture. You can also add a small amount of citron, finely cut, for additional flavor and texture.
5. Gradually add half a pound of the finest flour, sifting it three or four times before adding to the batter. Mix well until the flour is fully incorporated.
6. Gently fold in the stiffly beaten egg whites, ensuring the mixture becomes light and airy.
7. Prepare a well-buttered mold by greasing it thoroughly. Sprinkle blanched and pounded almonds all over the mold, ensuring they stick to the butter.
8. Pour the pudding mixture into the prepared mold, filling it to the top.
9. Place the mold in a large pot filled with boiling water, ensuring the water comes at least halfway up the sides of the mold.
10. Cover the pot and simmer the pudding for a duration of three hours, ensuring the water remains at a gentle boil throughout the cooking process.
11. Once the pudding is fully cooked, carefully remove it from the pot and allow it to cool slightly.
12. Invert the mold onto a serving plate to release the pudding.
13. Serve the Prince Albert Pudding warm, either on its own or with a sweet brandy or fruit sauce.
