4. Add the tripe to the pot and stir to combine. Cover the pot and reduce the heat to low. Allow the tripe to simmer gently for about 2 hours, or until it becomes tender.

5. Remove the bay leaves from the pot and discard. Taste the stew and adjust the seasoning if needed.
