Silver Cake(Desserts And Cakes) - (Joe Tilden's Recipes For Epicures)
Beat lightly the whites of eight eggs. Cream two cups of sugar and
half a cup of butter. Stir into the eggs, adding three-fourths of a
cup of milk. Sift into the batter three cups of flour and one heaping
teaspoonful of baking powder. Bake in a moderate oven.
SILVER CAKE. MRS. JOHN LANDON.Whites of eight eggs, two cups of butter, two cups of sugar, one cup
of milk, one cup of corn starch, two cups of flour, one and one-half
teaspoonfuls of baking powder; mix corn starch, flour, and baking
powder together; add the butter and sugar alternately, then the milk;
add the whites of seven eggs last. Flavor to taste.
Silver CakeWhites of four eggs, three-fourths cup sugar, one-half cup butter, one
and one-half cup flour, one-third cup sweet milk, one teaspoonful baking
powder, one-half teaspoonful lemon juice. Cream butter and sugar, then
add eggs, then milk. Add flour next, then baking powder and, last,
flavoring. Bake in moderate oven.
To make a gold cake use the same recipe as for silver cake, substituting
yolks for whites of eggs, and vanilla in place of lemon juice.
Silver CakeWhites of 5 eggs, 1-1/2 cups sugar, 1/2 cup butter, 3 even cups flour, 1
of milk, 1 teaspoon cream tartar, 1/2 of soda, flavor with vanilla. Beat
butter and sugar to a cream; beat whites to a stiff froth and add. Sift
cream tartar with flour and dissolve soda in milk. Stir in a little
flour before adding milk.
