Instructions:

2. In a porcelain kettle, bring three quarts of water to a boil.

3. Add all the chopped vegetables (onions, carrots, turnips) to the boiling water, excluding the tomatoes and cabbage. Simmer for half an hour.

4. After thirty minutes, add the chopped cabbage and previously stewed tomatoes to the kettle. Also, add the bunch of sweet herbs. Let the soup boil for an additional twenty minutes.

5. Once the soup is cooked, strain it through a sieve, making sure to rub all the vegetables through the sieve to get all the flavorful juices.

6. In a separate bowl, combine the butter and flour, and beat until creamy. Season with salt, pepper, and a teaspoon of white sugar.

7. Add the butter and flour mixture to the soup and stir well. If desired, you can also add half a cup of sweet cream for added richness.

8. Bring the soup to a boil once again and let it cook for a few more minutes until it thickens slightly.

9. The vegetable soup is now ready to be served. For added crunch and texture, you can serve it with fried bread chips or top each dish with a poached egg.
