English Walnut Cake Recipe - Mrs. Mary W. Whitmarsh

History:
The English Walnut Cake is a classic dessert that has been enjoyed by many generations. The recipe has been passed down through families and has become a beloved treat for special occasions. The combination of sweet and nutty flavors, along with a moist texture, make this cake a crowd favorite.

Fun Fact:
Walnuts have a long history and were even mentioned in ancient Roman literature. They were highly regarded for their health benefits and were considered a symbol of fertility and immortality. In the Middle Ages, walnuts were a luxury item and were often used in desserts and pastries.

Recipe:

Ingredients:

- 1 ½ cups of sugar
- ½ cup of butter
- ½ cup of water
- 1 ½ cups of flour
- ½ cup of corn starch
- 2 teaspoons of baking powder
- The whites of six eggs
- Lemon flavoring
- 2 cups of light brown sugar (for the filling)
- ½ cup of water (for the filling)
- 2 egg whites (for the filling)
- 1 pound of English walnuts, chopped fine (for the filling)

Instructions:

1. Preheat your oven to 350°F (175°C).

2. In a mixing bowl, cream together the sugar and butter until light and fluffy.

3. Add the water to the mixture and continue to mix until well combined.

4. In a separate bowl, sift together the flour, corn starch, and baking powder.

5. Gradually add the dry ingredients to the sugar mixture, alternating with the egg whites. Mix well after each addition.

6. Stir in the lemon flavoring to taste.

7. Divide the batter evenly between two cake pans and smooth the tops.

8. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.

9. While the cakes are cooling, prepare the filling. In a saucepan, combine the light brown sugar and water. Heat over medium heat until the mixture reaches the thread stage (when a small amount of syrup dropped in cold water forms a thin thread).

10. In a separate bowl, beat the egg whites until stiff peaks form.

11. Slowly pour the hot brown sugar mixture into the beaten egg whites, continuously beating until it creams.

12. Fold in the chopped English walnuts.

13. Once the cakes have cooled completely, spread the filling evenly on top of one cake layer.

14. Place the second cake layer on top and press gently to adhere.

15. Serve the English Walnut Cake as is or dust with powdered sugar for added decoration.
