Orange Icing Recipe

Let it continue to simmer without stirring until the syrup reaches a temperature of 235°F (112°C) on a candy thermometer, or until it reaches the soft-ball stage. This process may take about 10 minutes.

2. While the syrup is simmering, in a separate bowl, beat the egg whites until they become thick and frothy. This can be done using an electric mixer or by hand with a whisk.

3. Slowly pour the hot syrup into the beaten egg whites while continuing to beat at medium speed. Be sure to pour the syrup in a thin, steady stream. Keep beating until the mixture cools down and forms stiff peaks. This may take around 10-15 minutes.

4. Once the mixture has cooled down, add the chopped nuts, mixed fruits, freshly grated orange zest, and orange juice. Gently fold them in using a spatula until they are evenly distributed within the icing.

5. The orange icing is now ready to be used. Spread it generously between the layers and on the top of your chosen cake. If desired, you can also use it to frost cupcakes or cookies. The icing pairs beautifully with vanilla, citrus, or even chocolate-based cakes.
