2. Stone the raisins and cut them in half. Add them to the mixing basin.

3. Mix in the sugar and carbonate of soda with the flour and raisins.

4. Dissolve the dripping in boiling water and pour it into the dry ingredients mixture.

5. Use a spatula or your hands to mix the ingredients together, forming a dough-like consistency.

6. Once the dough is well combined, leave it to stand overnight. This allows the flavors to meld together and results in a richer and more flavorful pudding.

7. The next day, prepare a cloth by dipping it in boiling water and wringing out any excess moisture. This cloth will be used to wrap the pudding.

8. Place the pudding mixture in the center of the cloth and tie it up tightly, ensuring no water can seep in.

9. Fill a large pot with plenty of boiling water and carefully place the wrapped pudding into the pot.
