- 4 large egg yolks
- 2 tablespoons unsalted butter
- 4 large egg whites

Instructions:

1. Preheat your oven to 350°F (175°C).

2. Place the pre-made pie crust into a 9-inch pie dish and press it firmly against the sides and bottom. Trim any excess crust hanging over the edges and crimp the edges with a fork.

3. In a medium saucepan, combine the lemon juice, lemon zest, 1 cup of granulated sugar, cornstarch, salt, and water. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.

6. In a clean mixing bowl, beat the egg whites and cream of tartar on medium-high speed until soft peaks form. Gradually add in 1/4 cup of granulated sugar and continue beating until stiff peaks form. Finally, add the vanilla extract and gently fold it into the meringue.

7. Pour the lemon filling into the prepared pie crust and spread the meringue topping over the filling, making sure to spread it all the way to the edges of the pie crust to prevent shrinking.

8. Bake the pie in the preheated oven for about 15-20 minutes, or until the meringue is golden brown. Keep a close eye on it to prevent over-browning.
