Mince Pie Recipe

Mince pies have a long and rich history, dating back to medieval times. It is believed that the origin of mince pies can be traced back to the Middle East, where a similar dish called "mincemeat" was made with finely chopped meat, fruits, and spices. Over time, this recipe made its way to England and became a popular Christmas treat.

Fun fact: In the early days, mince pies were not sweet but were made with meat, suet, and spices. They were often shaped like mangers to represent the birth of Jesus, hence their association with Christmas. As time went on, the meat content was gradually reduced and replaced with more dried fruits to create the sweet mince pies that we know today.

Here is a traditional recipe for mince pie:

Ingredients:
- 2 pounds lean, fresh beef, boiled and chopped fine
- 1/2 pound suet, shredded very fine
- 2 pounds seeded raisins
- 2 pounds currants
- 1/2 pound citron, chopped very fine
- 2 tablespoons cinnamon
- 2 tablespoons mace
- 1 grated nutmeg
- 1 tablespoon cloves
- 1 tablespoon allspice
- Salt to taste
- 2 cups white wine
- 2 1/2 pounds brown sugar
- 4 apples, peeled, cored, and chopped fine
- Rich crust for lining and topping the pies

Instructions:

1. Begin by boiling the lean beef until it is fully cooked. Allow it to cool, then chop it finely.

2. Add the chopped suet to the beef, ensuring that all gristle is removed. Mix them together in a large bowl.

3. In the same bowl, add the seeded raisins, currants, and chopped citron. Mix well.

4. Sprinkle the cinnamon, mace, grated nutmeg, cloves, allspice, and salt over the meat and fruit mixture. Mix thoroughly to incorporate all the flavors.

5. Pour the white wine and brown sugar into the bowl and let it stand for some time. This will enhance the flavors and combine them nicely.

6. Finally, chop the apples and add them to the mincemeat mixture. Stir everything together until it is well combined.

7. Cover the bowl and let it stand in a cool place for at least two days. This resting period allows the flavors to meld together and intensify.

8. Preheat your oven to 350°F (175°C).

9. Line your pie plates with a rich crust, and fill them with the mince meat mixture.

10. For the top crust, you can either use a solid piece or create decorative strips to place on top. Prick the crust slightly to allow steam to escape during baking.

11. Bake the pies in the preheated oven for about 30 minutes, or until the crust is golden brown and the filling is bubbly.

12. Remove the pies from the oven and let them cool slightly before serving. Mince pies are traditionally served warm, not hot.

Fun fact: In some cultures, it is believed that eating a mince pie every day between Christmas and Twelfth Night (January 5th) will bring good luck for the coming year.
