The tradition of enjoying a stuffed duck dish has long been a part of English culinary heritage. The practice of stuffing poultry can be traced back to ancient times when it originated as a way to enhance flavors and utilize ingredients effectively. Recipe:

Ingredients:
- 1 whole duck (approximately 4-5 pounds)
- Salt and pepper, to taste
- 1 cup vinegar
- 1 large onion, chopped
- 2 sprigs of parsley
- 2 sprigs of thyme
- 1 tablespoon butter
- 1/2 cup raisins
- A few cloves
- 1 lemon, sliced
- 1 teaspoon prepared mustard
- 2 large pickles, chopped
- 1/4 cup sugar
- 2 egg yolks, well beaten
- Fresh parsley, for garnish

Instructions:

1. Preheat the oven to 350°F (180°C).

2. Clean the duck thoroughly, removing any excess fat or giblets. Pat dry with paper towels.

3. Season the duck generously with salt and pepper, both on the inside and outside.

4. In a large pot, combine the vinegar, chopped onion, parsley, thyme, butter, raisins, cloves, lemon slices, and prepared mustard. Bring the mixture to a simmer over medium heat.

5. Carefully place the seasoned duck into the pot, ensuring it is submerged in the liquid. If necessary, add more water or vinegar to cover the duck.

6. Cover the pot and let the duck cook until it is done, approximately 1 to 1.5 hours. The meat should be tender and easily pull away from the bone.

7. Once cooked, remove the duck from the pot and set it aside to cool slightly.

8. Strain the cooking liquid, discarding the solids, and return it to the pot. Add the chopped pickles and sugar to the liquid.

9. In a small bowl, whisk the beaten egg yolks. Slowly pour a ladleful of the hot cooking liquid into the egg yolks while continuously whisking. This will temper the yolks and prevent them from curdling when added to the pot.

10. Gradually pour the tempered egg yolks into the pot, whisking constantly. Cook the liquid over low heat until it thickens, creating a savory sauce.

11. Carve the duck into serving portions and arrange on a platter. Drizzle the thickened sauce over the duck.

12. Garnish with fresh parsley and serve the English Stuffed Duck hot, accompanied by roast potatoes or steamed vegetables.
