Fried Liver and Bacon Recipe:

History:
Fried Liver and Bacon is a classic dish that has been enjoyed for many generations. Liver has been a staple in diets around the world for centuries due to its high nutritional value. In the past, liver was often prepared to make the most out of all parts of the animal as a means of reducing waste. The combination of liver and bacon offers a delicious contrast of flavors and textures. This dish is often associated with comfort food and is enjoyed by meat lovers worldwide.

Fun Facts:
- Liver is known for being a powerhouse of nutrients such as iron, vitamin A, and vitamin B12.
- The liver used in this recipe can be from a young beef, which is a more affordable option compared to calves' liver.
- Bacon adds a savory and smoky flavor to the dish, complementing the richness of the liver.

Ingredients:
- 1 pound beef liver, sliced into 1-inch thick pieces
- 12 slices of bacon
- All-purpose flour, for dredging
- 2 tablespoons butter
- Salt and pepper, to taste
- 1 tablespoon all-purpose flour (for gravy)
- 1 cup sweet milk or water
- Hot platter, for serving
- Additional bacon for serving (optional)

Instructions:

1. Begin by rinsing the beef liver slices and pat them dry. Remove any thin skin or tough fibres from the edges of the liver.

2. In a large frying pan, fry the bacon slices until they become crisp and brown. Once done, transfer the bacon to a warm platter and keep it warm in the oven.

3. Dredge the liver slices in all-purpose flour, coating them evenly.

4. In the same frying pan used for the bacon, melt a little butter and add the liver slices. Fry them slowly over medium heat until they are well done but still moist. Turn the liver slices frequently to ensure even cooking. Season with salt and pepper to taste.

5. Once the liver slices are cooked, remove them from the pan and keep them aside.

6. In the pan containing the remaining bacon fat and butter, add one tablespoon of all-purpose flour. Stir it until it becomes smooth and brown.

7. Gradually add one cup of sweet milk or water to the pan, stirring continuously. Keep stirring for a few minutes until the gravy thickens. Season with salt and pepper to taste.

8. If the liver slices are slightly overdone, place them back in the pan with the gravy. Cover the pan and let it simmer gently for a few minutes.

9. Finally, transfer the liver slices and gravy onto a hot platter. Serve the bacon on a separate dish, alongside the liver and gravy. Optionally, you can also cook some additional bacon.
