Ingredients:

- 1 tablespoon butter
- 1 small onion, chopped

4. Add the tablespoon of butter to the boiling water.
5. Add the string beans to the kettle by handfuls. Cook the beans until they are tender.

7. Once the beans have cooled, add the chopped onion and salt to taste.
8. Pour enough good-quality vinegar over the beans to cover them completely.
9. Allow the beans and onion to marinate in the vinegar for two days.
10. After two days, strain the vinegar from the beans.
11. Boil the vinegar and add water if it is quite sour.
12. Pour the hot vinegar mixture over the beans.
13. Transfer the beans into quart glass jars, filling them almost to the top.
14. Pour pure olive oil over the top of the beans, ensuring that they are well covered.
15. Screw the jar covers tightly and place the jars in a cool place until ready to use.
