1. Soak one pint of black beans in water overnight. Drain the beans and rinse them thoroughly.

2. In a large pot, melt two tablespoons of butter over medium heat. Add the chopped onion and fry until it becomes translucent and fragrant.

3. Add the soaked black beans to the pot and stir them together with the fried onion. Also, add the celery stalks or celery root to enhance the flavor of the soup.

4. Pour two quarts of water into the pot and bring it to a boil. Reduce the heat to low and let the soup simmer for about three to four hours, or until the beans are soft and tender. Make sure to add more boiling water as needed to prevent the soup from becoming too thick.

6. Place the pot back on the stove over low heat. Add the pepper, mustard, and a few grains of cayenne to the soup. Stir well to combine the spices.

7. In a separate saucepan, melt one tablespoon of butter. Add the flour and cook for a minute, stirring constantly. Slowly pour two-thirds of a cup of heavy cream into the saucepan, whisking continuously to prevent lumps from forming. Continue to cook until the mixture thickens.

8. Gradually add the thickened cream mixture to the soup, stirring constantly. This will help to give the soup a velvety texture.

9. Cut a lemon into slices, removing any seeds. Also, slice two hard-boiled eggs.
