Add this flour mixture to the pot of tripe, along with catsup, paprika, ginger, and one teaspoon of salt. Stir everything together until it reaches a thick, paste-like consistency. Adjust the seasoning according to your taste preferences.

Continue to cook the tripe for the remaining half hour, allowing the flavors to meld together and the sauce to thicken. Make sure to stir occasionally to prevent any sticking or burning.

Once the tripe is cooked and the sauce has thickened, it is ready to be served. Dish out the tripe into serving bowls, making sure to include a generous portion of the sauce. Garnish with some freshly chopped parsley for a pop of freshness and color.
