5. Sweeten the strained barley liquid with white sugar according to your taste preferences. Start with a small amount and adjust as needed.
6. Add the juice of one lemon to enhance the flavor and give the jelly a refreshing tang.
7. Pour in a quarter cup of white wine to add richness and depth to the jelly.
8. Dissolve a quarter ounce of isinglass in a little water. Isinglass is a form of gelatin derived from the swim bladders of fish and is often used as a clarifying agent in cooking. Stir this isinglass solution into the jelly mixture.
9. Pour the jelly mixture into a mold of your choice and allow it to set in the refrigerator for several hours or overnight.
10. Once the jelly has set, remove it from the mold and serve chilled.
