4. Gradually add the salt to the egg yolk mixture and mix well.
5. In the bowl with the egg whites, beat them until they form stiff peaks.
6. Gently fold the beaten egg whites into the egg yolk mixture until well combined.
7. Grease a cup and pour the batter mixture into it.
8. Place the cup in a pan of hot water. Make sure the water is enough to reach halfway up the sides of the cup.
9. Steam the cup of batter mixture until firm. This usually takes about 15-20 minutes.
10. Once the dumpling is cooked, remove it from the cup and let it cool slightly.
11. Using a teaspoon, carefully cut the dumpling into small pieces.
12. In a separate pot, heat the soup until boiling.
13. Just before serving, add the chopped parsley to the boiling soup.
14. Pour the hot soup over the cut sponge dumplings.
15. Serve warm and enjoy!
